The restaurantĆƒā€šĆ‚ā€™s cuisine combines authentic Cuban and Latin dishes with exotic spices and tangy sauces from the Pacific Rim. All of this, combined with the restaurantĆƒā€šĆ‚ā€™s oceanfront location, creates a culinary experience unlike any other in the Caribbean.

HAVANA BLUE was born from the vision of husband and wife team, Eric and Nicole Horstmeyer, and was their first restaurant venture launched in November 2004. Their company, Blue Shore Grill, LLC was chosen because of the creative concept and the pairĆƒā€šĆ‚ā€™s extensive business background. Nicole attributes the restaurantĆƒā€šĆ‚ā€™s successful differentiation, in part, to her experience in New York City where she worked in the world of high stakes marketing. There she specialized in new product marketing, public relations, and the design and execution of luxury brand events. More importantly, Nicole had the opportunity to work with celebrity chefs from across the Nation. Meanwhile, Eric attended law school at New York University. He was Of Counsel with the prestigious Virgin Islands law firm of Dudley, Topper, and Feuerzeig, LLP until January, 2006, where his practice focused on real estate, tax and corporate/commercial transactions, though he will tell you himself that being a restaurateur is his newfound passion. Eric now devotes 100% of his time and effort to Blue Shore Grill.

HAVANA BLUEĆƒā€šĆ‚ā€™s menu focuses on fresh. The Bebidas (drink) menu features an array of creative drinks made with fresh squeezed fruit juices. Guests can sip on a Mango Mojito made with locally grown organic mint and limes, or Sangria marinated with mangos, green apples and lemongrass. Dinner menu selections include Thai Coconut Ceviche, Crispy Duck Spring Rolls, Ancho Chile & Espresso Rub Filet, and the signature dish, Miso Glazed Sea Bass. Fresh fish and lobster are brought in daily by local fisherman. After dinner the cuisine is complimented by traditional Cuban desserts such as Coconut Flan and Tres Leches Yuzu Cake. There are also premium hand rolled cigars and sipping rums available to finish the night off in true Cuban style.

One need only take a look around HAVANA BLUE to see that the operation is run by people who truly care about the entire dining experience. From the moment a guest walks into the restaurant, they are greeted by an awesome eight (8) foot wall of water. This along with the soft blue light which radiates from the roof of the restaurant, the cool, celestial lounge music emanating from the sound system, the floor to ceiling fabric sheers set against 20 foot open windows over the ocean, the oversized pottery containing beautiful palm trees, the ocean sounds that are pumped into the bathrooms and last but not least, the 150 square glassed hurricane candles which adorn each and every table, all serve as further proof that few if any details escape this creative group. HAVANA BLUE received the Restaurant Award of Excellence from Wine Spectator Magazine for its extensive wine list and Ćƒā€šĆ‚ā€œReservaĆƒā€šĆ‚ā€ wine selections.

In December, 2006, Blue Shore Grill launched its second restaurant, LOTUS. Located on the east end of St. Thomas at American Yacht Harbor in Red Hook, customers will surely take notice that the dĆƒĘ’Ć‚Ā©cor and creative cuisine parallel sister pan-Latin eatery HAVANA BLUE. The mantra is to Ćƒā€šĆ‚ā€œstep outside the bento boxĆƒā€šĆ‚ā€ to enjoy Caribbean Pan Asian Cuisine and Fresh Local Sushi. I took my family of 6 to Havana Blue last night (ages 4-12) and although I agree that the place is not really geared toward kids, the staff was very friendly and made us feel welcome. There is a kids menu (which is unheard of for a place like this) and they have crayons and coloring books for kids. Havana Blue is located on the Marriott property which is very family oriented. The food and ambience at Havana Blue is incredible. This is a must try experience.

The atmosphere here is just the beginning of a wonderful dining experience. The food is Cuban influenced, but with a touch that only Cuba could dream of! Fantastic dishes and drinks. I'm not a Mojito fan, but make an exception when I visit here. They also have a sangria that is far better than anything I've tasted elsewhere. My only negative comment is with the hostess. Lousy attitude, unfriendly, and not the first impression a restaurant wants to make. Once you get past this witch, your evening will be truly enjoyable.

If your bravest hopes for a restaurant experience in paradise are affected by hip examples in Miami, "oh my gosh" spots in Malibu or Hawaii, the Med or other fashionable zip codes, Blue will NOT disappoint you. Utterly stunning space and vistas; drop-dead romantic; young, engaging staff; sexy vibes; fabulous, wonderfully creative food. We dined widely all over St. T - like all Caribbean venues, restaurants are affected by "busy-season" rhythms and sometimes, ennui - but this spot was without peer or comparison - a terrific night. Having been a loyal patron of Havana Blue since it opened in 2004, I can offer some insight on the review below which mentions the chef leaving. The Chef De Cuisine at Havana Blue is Jose "Pepe" Rodriguez. He has been there since the opening and is still there today. The Executive Chef has changed a couple of times but anyone who knows anything about the restaurant business knows that the Executive Chef isn't the one who actually cooks the food or develops the menus---the Chef De Cuisine and the Sous Chefs handle thiese duties. Chef Rodriguez has always done amazing work with the cuisine at Havana Blue and I always look forward to dining there every year I return to St. Thomas. Plus, I just heard they hired their new Executive Chef from New York and this guy actually worked for Jean Georges and acclaimed chef, Ferran Adria of E. Bulli. It doesn't get any better than that!.

recently went back to St. Thomas (we live in the BVI)and came to visit Havana Blue, again I had a wonderful meal and experience. Unfortunatly I heard that the Chef left and is now back in the states. The Chef was amazing and came out to say hi every time I came in. I took my daughters in over the summer and he made them feel like queens. Its unfortunate that he is no longer there and I hope the cuisine remains as amazing as it is. Good Luck Chef!!

The service was wonderful and the food, well there really aren't words for how amazing it was. The staff was friendly and attentive to all of our needs. The views are breath taking. wow! best restaurant in the caribbean by far. My wife had the Grouper with Apple "Caviar" what an amazing culinary innovaion. I had a special appetizer with green tea "air", what creative minds and presentations. For my entree I enjoyed a salmon dish with yuca fries and a mango and dijon sauce,phenominal!! Service was slower than I expected but the restarant was packed and the cuisine made up for the wait. We need to get a restaurant like this in our hometown of Atlanta. This is a one of a kind place with a one of a kind culinay style. We will be back to Havana Blue n every trip here

Havana Blue is by far the best restaurant on St. Thomas and the rest of the virgin islands. They also just aquired Chef Richard Garcia who came out to greet us at the end of our meal. We are from the Boston area and know of Chef Garcia talent as he was a Chef in our area.We were very pleased and surprised when we found out he was the new chef. The food was amazing and the service was great. We will be coming back to Havana Blue on every trip. We had the Chefs tasting menu 6 courses of truly magnificent smart fusion. The daily menu looked great as well and the mojitos are the best I have ever had. The atmosphere is chic Miami/New York and the entire staff and management team made us feel like movie stars. Highly urge everyone to make the trip to St. Thomas just to experience Havana Blue would make it worth the trip.

The event coordinator at the Elysian Hotel (Jamie) recommended a unique and special dinner on the beach at Havana Blue that provided the ideal setting for a sunset proposal. Consisting of 7 courses, a different wine for each, and served by a private server, this was by far the most amazing meal my fiance and I have ever tasted. Havana's preparation and service truly exceeded all expectations, the food was incredible and though somewhat pricey, the private dinner on the beach is a truly memorable experience that I recommend to all couples. The food, ambience, service, total experience is on par with anything I've tried in NYC, LA, Miami and even Paris, France...and we only dine with the best. The chef's tasting menu was better than a recent tasting we had at the renowned Charlie Trotter's in Chicago. This is one of those experiences that everyone travelling to St. Thomas must try. I cannot fathom how anyone could give this restaurant a poor review. It has got to be one of the best kept secrets on the national/international culinary scene. Excellent! We stayed at the Frenchmen Reeve and went back to the restaurant 3 times. My husband and I just want to fly into St. Thomas just to dine there, it was unforgettable and I would consider it to be our Favortie restaurant and we live in the Hamptons and travel back and forth to New York City and we still say Havanna Blue is our Favorite, the atomosphere, sevice and food was fantastic!! Everything was excellent from the staff greeting us at the door, to the bartender taking special orders for drinks, moving us to a table near the beach, etc. The soft shelled crab was the best I ever tasted-as was the calamari. Havana Blue was my selected site for my June 30, 2006 wedding reception and though I chose it "sight unseen", I was thorougly pleased with the ENTIRE experience. Excellent-EXCELLENT food (the Sea Bass is "off the chain"), attentive service, interesting and eclectic menu, sounds of the (real) ocean...just wonderful beyond words. I was really able to provide for my guests the fine dining experience I'd imagined. Everyone in attendance just went on and on about the high caliber of the food and the experience. They have: Havana Blue's decor is breathtaking, the food is sublime, and the balance between seriously good food and seriously snooty staff has been acheived. It's fine dining, but fine dining well suited for the lapping of the waves at Frenchman's Bay. But, to me, the real stunner it took a Puerto Rican - chef )mar Sanchez -- to pull off a sultry Havana vibe on de island. God bless those with eclectic vision and the talent to realize it.

Wonderful! My husband and I ate there 4 times out of our 6 night stay. It was truly amazing and we hated to leave. The ceviche was outstanding, as was the crab appetizer. The chef personally visited our table and tailored a dish for my husband; he can't eat spicy food. We were very impressed.
