Hibernia is a small, intimate and elegant restaurant, with 11 tables set in an open air West Indian house by the sea. Recently, Hibernia has added an art gallery as well.
Raoul, who has represented Anguilla on an international level, has formal training from the Ecole Hoteliere of Strasbourg, France, and cooking schools in Thailand and Hong Kong. He creates French/Asian dishes using either the freshest local seafood or high quality meats imported from the US and France.

The owners, Mary Pat & French Chef-Raoul travel world-wide annually for 2 months & use this inspiration to create a new menu for each season. They opened the restaurant in 1987 in an intimate West Indian house by the sea.
