The fresh margaritas here are famous on Cozumel, and the menu offers much to please the gringo or gringa stomach, toning down the hotter elements without losing the authentic Mexican flavors. Good choices include corazón de filete de chipotle (beef tenderloin with chili) and the fish, which arrives on its own little grill. Flan de cafe al rompope (coffee flan laced with liqueur) is a nice ending to the meal. The building that houses Pancho's originally was a warehouse transformed into a luxury hotel. The hotel is long gone and the building now houses the classy Los Cinco Soles crafts store, in front, and Pancho's, in back. You can sit inside, amid the gorgeous Mexican decor, or outside, in the lush garden terrace with a water fountain. AE, MC, V.
